THIBAUT SPIWACK, chef of the Restaurant Le Mandragore
His cuisine is inspired by his many trips to Asia and South America,
as much as it is led by solid fundamentals of high French gastronomy

Our chef

Thibaut Spiwack

Thibaut Spiwack is a promising name of the French cuisine, winner of the Escoffier competition, and who made his reputation in prestigious restaurants such as the Georges V and Jules Verne.

Thibaut Spiwack skilfully combines colours, textures and flavours according to the seasons and selects his products according to high-quality criteria. A particular attention is paid to desserts, thanks to the presence of the pastry chef.
The Chef develops menus tailored to the different services, such as the breakfasts, the tapas for the Bar, menus for special events and brunches on the weekend.

A new form of

'art de vivre'

Adventuring into Le Mandragore means embracing the spirit of the place, an atmosphere that invites you to leave the bustle of the city behind and enjoy the present moment.

Our menus are designed in 3 and 5 courses in order to create a unique culinary experience. They evolve on a weekly basis to offer seasonal products, prepared in a manner that will awaken your curiosity and pleasure. We’re proud to say, some of our fresh products come directly from our Gardens, hens and beehives.
